When dinner time comes around, quick healthy cooking is the goal. It often seems easier to go out and pick up some fast food or order a pizza, but in reality cooking larger portions once or twice a week will save you time and money. One delicious dish I have discovered is Italian chicken with vegetables. This meal is very easy to prepare and once finished, the chicken can be used in several different ways so that you get variety throughout the week; this dish isn’t just delicious, it brings quick healthy cooking to a new level.
I recommend cooking this on Monday, so you can use it all week for dinners or lunches. First off you will need the following ingredients: chicken breast steaks, tomato sauce, potatoes, mushrooms, dry white wine, and Italian seasoning. Really you can add in any other vegetables you enjoy. In order to prepare the food, first combine the tomato sauce with about 1/4 cup white wine, and Italian seasoning to taste. Then pour it over the chicken and chopped vegetables in a casserole dish. The next step is to simply throw it in the oven and cook for about an hour at 350 degrees.
Quick healthy cooking has never been so easy, and more importantly, tasty! Once you have the chicken and vegetables made, you can use it for stir fry, for sandwiches, and even in a rice dish. The main benefit of preparing this recipe is that you will cut your cooking time in half the rest of the week by simply using the chicken and vegetables in other dishes. I don’t always have time at night to cook homemade dishes, and I want to give myself a way to avoid the fast food line as much as possible, so that is why quick healthy cooking is what I accomplish on Mondays so by Friday I feel great!
